Japanese Cheesecake



I tried to bake Japanese Cheesecake today..The result was not really good. It's too moisture, not easy for me to slice them. Hopefully it would better after I put in the fridge.

2nd day...
The first one I made yesterday turned out was not good in appearance but tastes o.k. I could not sleep well last night coz I could not wait to make another one this morning :P Thank God - it turned out " GREAT"!!!! Kate & James loves it...Even though not really cheesy but very fluffy and not rich at all.
Bro, I will make you one when you come this year...PROMISE! Will post the recipe here after I converted them from Chinese to English... here they are..

Ingredients︰
Flour -60 g
Cornstarch -20 g
Egg White - 4 + 40g Sugar
Egg Yolk - 4 + 20g Sugar
Kraft Cheese - 4 pcs
Milk - 80G
Unsalted Butter - 60g
Instructions :
1. Preheat Oven- 160 C / 320 F (Add hot water to baking try) 焗盆加熱水。
2. 4Egg White + 40g Sugar ( Beat till foamy)用電動打蛋機打至企身。
3. 4Egg Yolk + 20g Sugar ( Beat till light yellow)用手打至淡黃色。
4. Sieve 60g Flour and 20g Cornstarch 篩好麵粉及粟米粉。
5. 4 Kraft Cheese + 80g Milk + 60g Butter ( Heat till melted) 一同隔水煮熔 。
6. Mix (2)+(3), then (4), and (5) stir well,Bake 30 mins

Kate and Mini Shopping Cart


We went to this Organic food store " Trader Joe's" this morning. There is something Kate is very fascinating of - " Mini Shopping Cart" every time she goes. She puts the banana into the cart. When she pushes the shopping cart around the store, few customers there look at her and say she is so cute.

Ginger Milk "Keong Chap Chong Nai"




Recently I've learned how to make this " Ginger Milk". It is pretty easy.... Minced the ginger then squeeze the juice. Boil the milk ( whole milk) with sugar. Rest for 4 mins then pour the milk into the ginger juice. It's nice having this dessert during winter time. It could make you feel warmer.

DIY Project

I love DIY lately. I made this candle stick holder with only few $ materials. Candle is 69 cents, the scrapbook paper 30 cents and the Styrofoam cones costs me $3.


My bedroom has been bored and empty for awhile. I made those posters to make it look more cozy... and it is another inexpensive project. Less than $12 for 4 of them.

Our Princess


Our initial plan was let Kate goes to preschool on Jan, 2010. After seeing her learning progress lately, we decided to let her go on 2011 when she is four. We could save around $12,000 if we have home schooling . She's a very fast learner. She has been learning a lot of alphabets lately. She knows A,B,C,E,I,K,M,O,P,T,U,V,W,X,Y( only capital letters). She knows her full name - KATE WAI. James and I so proud of her. As a mom, I will try my best to teach her and be her good role model. She is a clean and tidy kid. She will clean-up her toys after she's done. Sometime if she see James leave the magazine on the floor, she would put them back to the magazine rack for him. She loves singing and dancing too.Thank god for giving us such a great girl. Below are 2 clips that shown she is learning the name of animals and some alphabets.

Nutella Cream Cupcakes

We were having Pot Luck at friend's home last Saturday. I made these cupcakes. I modified the recipe abit and it turned out alot of friends like them. One of the girls at the party, she had 2 of them :P . Below is the recipe...

Nutella Cream Cupcakes
Ingredients:
2/3 cup all-purpose flour ( sieve the flour)
2 1/2 Tbs. Nutella cream
3/4 tsp. baking powder
1/4 tsp. salt
11 Tbs. unsalted butter, cut into pieces
3/4 cup sugar
3 eggs, at room temperature

Directions:
Preheat an oven to 350°F. Line a standard 12-cup muffin pan with paper or foil liners. In a bowl, whisk together the flour (sieve the flour), baking powder and salt. Place the Nutella cream and butter in a large heatproof bowl and set over but not touching simmering water in a saucepan; stir frequently until melted and smooth, about 5 minutes. Remove the bowl from the saucepan and let the chocolate mixture cool to room temperature, 10 to 15 minutes.

Using a wooden spoon, stir the sugar into the chocolate mixture until combined. Stir in the eggs one at a time, beating until combined after each addition,. Gently fold in the flour mixture just until no traces of flour remain; do not over mix.

Divide the batter evenly among the prepared muffin cups, filling each about three-fourths full. Bake until a toothpick inserted into the center of a cupcake comes out with only a few moist crumbs attached, 18 to 20 minutes.

Bag


Someone bumped into James car last week. The inspector from the insurance company came to inspect James car yesterday. They gave him 2 options, either compensate $600 or get the car to the body shop and they will fix them up. Of course James would rather want the 600 bucks coz that's his working car ( very high mileage). James decided to give me that money as a gift. He buy me something every year after tax season. I have been thinking to get this L.V's bag for awhile. It costs much cheaper in Europe than here coz we need to pay the stupid sales tax ( 8.52%) and it will be increased on the April 1st by 1%. Let me know who can get me this bag in Europe...

Double Rainbows

This is something you don't see everyday in Bay Area. Double Rainbows! We saw them b4 we go to Kate's play group this morning. I think it's a good sign to me. Normally, Kate's very attach to me wherever she goes but today she's different. She played with other kids without me. During the play group when the teacher asked her to go out and sing, she did so which she normally would not. I am so proud of her........Good Job , Kate!!! You are my girl!

Curry Chicken and Roti Canai


I've missed so much M'sian food for years! We have one Malaysian restaurant " Banana Island " down the street but of course it's not as good as the orginal one in MY . Last year my parents came, my mom cooked a lot of Malayisan food for us. I learned one of her best dishes ever " Curry". I've been thinking to cook that for awhile after my parents left but just thought it would be too complicated to cook. All my cooking has to be " easy and quick" - I am a lazy mom :P. Until today I found some "Curry Chicken Powder" in my kitchen. After read the instructions and recall what my mom has tought me, I decided to cook curry chicken today. I went to supermarket to get some needed ingredients and some ready-made "Roti Canai" (so called Indian Bread in Bay Area) to dip with it. James likes them so much. He said it's much better than Banana Island, I am not sure if it's true but at least I got his compliment. So happy!!! Thanks Mom for the recipe.
